Recipe: Paleo (Gluten-Free) Chocolate Chip Cookies

These cookies are the most soft,  delicious, and perfect smelling cookies!  I see this recipe as a gift from one of our favorite customers!   Yum, Yum!  Ingredients:  3 1/4 cups of almond meal/flour, 1 teaspoon of salt, 1 teaspoon of baking soda, 2 eggs, 1 tsp of vanilla, 1/2 cup of maple syrup, 1/4 cup of coconut oil (melted and cooled), 1/4 cup of butter (melted and cooled), 1 1/2 cups of Dark Chocolate chips.  Directions:  Combine almond flour, salt and baking soda in a large bowl.  In a separate bowl mix eggs, vanilla, coconut oil, butter and maple syrup.  Add wet ingredients to dry ingredients.  Add chocolate chips; stir.  It will be a wet dough.  Place in the refrigerator for 30 minutes.  Preheat oven to 375 degrees. Line baking sheet with a silpat liner.  Using a #60 scoop (2 teaspoon), (42 cookies), place on cookie sheet evenly spaced.  Bake 8 to 10 minutes or until tops are golden brown.  Remove and cool.  Place in sealed container and refrigerate and ENJOY!
