We are in the midst of a Summer season that is beyond our imagination!! The strawberries came in early and stayed later than we ever expected. We even had blueberries and strawberries at the same time which was a first for us! There is a plethora of everything you can think of from delicious zucchini and summer squash, green and yellow beans that have the perfect snap as you enjoy them, green peppers, rainbow carrots that are sure to put a smile on your face, pickling cucumbers that are a perfect match with our pickle kits from White Mountain Pickle Company, corn on the cob that is as sweet as sugar, tomatoes that are best-loved on sandwiches or sliced with a bit of fresh basil, mozzarella and drizzled with balsamic vinaigrette, as well as, juicy peaches and delicious blueberries to top it all off! So much goodness, right here in New Hampshire! It's very hard to believe that our early season apples will arrive in a couple of weeks! These cookies are the most soft, delicious, and perfect smelling cookies! I see this recipe as a gift from one of our favorite customers! Yum, Yum! Ingredients: 3 1/4 cups of almond meal/flour, 1 teaspoon of salt, 1 teaspoon of baking soda, 2 eggs, 1 tsp of vanilla, 1/2 cup of maple syrup, 1/4 cup of coconut oil (melted and cooled), 1/4 cup of butter (melted and cooled), 1 1/2 cups of Dark Chocolate chips. Directions: Combine almond flour, salt and baking soda in a large bowl. In a separate bowl mix eggs, vanilla, coconut oil, butter and maple syrup. Add wet ingredients to dry ingredients. Add chocolate chips; stir. It will be a wet dough. Place in the refrigerator for 30 minutes. Preheat oven to 375 degrees. Line baking sheet with a silpat liner. Using a #60 scoop (2 teaspoon), (42 cookies), place on cookie sheet evenly spaced. Bake 8 to 10 minutes or until tops are golden brown. Remove and cool. Concord Hospital and the folks that work there have been such an asset to Johnson Golden Harvest! Thank you for the amazing samples each week! 1/4 cup of olive oil, 1 1/2 cups of diced yellow onion, 1 tsp of minced garlic, 2 cups of diced eggplant (skin on), 1/2 tsp of Thyme leaves, 2 cups of diced bell pepper, 1 cup of diced zucchini, 1 cup of diced yellow squash, 1 1/2 cups of peeled, seeded and chopped tomatoes, 1 tbsp of thinly sliced basil leaves, 1 tbsp of chopped fresh parsley. Set a large 12 inch saute pan over medium heat and add the olive oil. Once hot, add the onions and garlic to the pan. Cook the onions, stirring occasionally, until they are wilted and carmelized, about 5 to 7 minutes. Add the eggplant and thyme to the pan and continue to cook, stirring occasionally, until the eggplant is partially cooked, about 5 minutes. Add the green and red peppers, zucchini, and squash and continue to cook for an additional 5 minutes. Add the tomatoes, basil, parsley and salt and pepper, to taste, and cook for 5 [...]

Thank you to our friends at Concord Hospital for sampling this delicious soup at our market. What a great addition to our market and to our dinner tables! 2 tablespoons olive oil, 1 large onion, 1/2 teaspoon nutmeg, 4 pounds butternut squash, 2 Gala apples, 4 1/4 cups vegetable broth , 1/2 cup apple juice, salt and pepper Heat the oil in a large pot, over medium heat. Add the onion and nutmeg and saute the onion until it begins to brown, about 5 minutes. Add squash (cut into 1 inch chunks) , broth, apple (cored and diced) and apple juice. Bring to a boil; reduce the heat and let it simmer for about 30 minutes, until the squash is fork tender. Use and emersion blender, or work in batches with a standing blender to puree the soup. Return the soup to the pot and season with salt and pepper. ENJOY! [...]

It's always hard for me to see the Summer go but when I wake up to the bright crisp mornings I can't help but smile! We have had a picture perfect Summer at Johnson Golden Harvest and I am so thankful for the beautiful weather, the plethora of produce and our loyal customers!
