Baked Parmesan Zucchini

 
Ingredients:
4 Native NH Zucchini (quartered lengthwise)
1/2 cup of fresh grated parmesan
1/2 teaspoon of dried thyme
1/2 teaspoon of dried oregano
1/2 teaspoon of dried basil
1/4 teaspoon of garlic powder
salt and pepper (to taste)
2 tablespoons of olive oil

Directions:
1.  Preheat oven to 400 degrees.
2.  Coat a cookie sheet with non-stick spray and set aside.
3.  In a small bowl, combine parmesan, thyme, oregano, basil, garlic powder and salt and pepper, to taste.
4.  Place zucchini on the prepared cookie sheet.
5.  Drizzle the olive oil over zucchini.
6.  Sprinkle the parmesan mixture over the zucchini.
7.  Bake for 20 minutes or until the zucchini is tender.
8.  Broil for 2 to 3 minutes until the topping is crisp and brown.
