Ingredients:
1 pound of fresh NH asparagus (trimmed and cut into 1/2 inch pieces)
10 slices of bacon (cooked and crumbled)
2 cups of crumbled feta cheese
4 large eggs
1 1/2 cups of Greek Plain Whole Milk Yogurt
salt and pepper to taste
Directions:
- Place asparagus in a steamer over 1 inch of water.
- Cover and cook for 6 minutes.
- Drain and cool.
- Place bacon on a cookie sheet.
- Place bacon in a cool oven and set to 400 degrees.
- Cook bacon for 20 minutes and place on paper towels to drain.
- Crumble and set aside.
- Beat eggs, yogurt, salt and pepper until well combined.
- Mix all ingredients together.
- Pour into a buttered casserole dish and bake uncovered for 40 minutes or until it is firm in the middle.
