Crustless Asparagus Quiche

Ingredients:

1 pound of fresh NH asparagus (trimmed and cut into 1/2 inch pieces)

10 slices of bacon (cooked and crumbled)

2 cups of crumbled feta cheese 

4 large eggs

1 1/2 cups of Greek Plain Whole Milk Yogurt

salt and pepper to taste 

 

Directions:

  1. Place asparagus in a steamer over 1 inch of water.  
  2. Cover and cook for 6 minutes. 
  3. Drain and cool.
  4. Place bacon on a cookie sheet. 
  5. Place bacon in a cool oven and set to 400 degrees.  
  6. Cook bacon for 20 minutes and place on paper towels to drain. 
  7. Crumble and set aside. 
  8. Beat eggs, yogurt, salt and pepper until well combined. 
  9. Mix all ingredients together. 
  10. Pour into a buttered casserole dish and bake uncovered for 40 minutes or until it is firm in the middle.
