Roasted Garlic Potatoes and Green Beans


1 pound of fresh NH green beans

1 pound of NH red potatoes

1/4 cup of olive oil

1 teaspoon of garlic powder 6 garlic cloves (minced)

1 teaspoon of salt (to taste)

1 teaspoon of pepper (to taste)

1 tablespoon of Italian Seasoning



1. To roast your potatoes and green beans: preheat your oven to 400 degrees.

2. In a large pot, boil halved potatoes for 8 minutes.

3. At 6 minutes, add the green beans to the boiling water for the last 2 minutes.

4. Drain the potatoes and the green beans and transfer to a large bowl.

5. Add the garlic powder, minced garlic cloves, salt, pepper and Italian Seasoning and stir all together. 

6. Spread the prepared green beans and potatoes on a baking sheet (in one single layer.)

7. Roast for 25 minutes (stirring halfway through.)

8. Remove from the oven and transfer to a serving plate.
