Ingredients:
2 tablespoons of olive oil
1 yellow onion
1 clove of garlic (chopped)
1 teaspoon of ground cumin
1/2 teaspoon of salt
1/2 teaspoon of pepper
1 pound of NH tomatoes (halved, if large)
8 large eggs
1/4 cup of baby spinach (chopped)
toasted sourdough bread (from Boppy's Bakery)
Directions:
- Preheat your oven to 400 degrees.
- Heat oil in a large oven-safe skillet on medium.
- Add onion and cook until golden brown (stirring constantly.)
- Stir in garlic, cumin, salt and pepper.
- Cook for 1 minute.
- Stir in tomatoes.
- Transfer pan to oven and roast for 15 minutes.
- Remove pan from the oven and stir the mixture.
- Make 8 small wells in mixture and crack 1 egg into each.
- Bake eggs for 10 minutes.
- Sprinkle with chopped spinach.
- Serve with Sourdough toast.
