Shakshuka

Ingredients:

2 tablespoons of olive oil

1 yellow onion

1 clove of garlic (chopped)

1 teaspoon of ground cumin

1/2 teaspoon of salt

1/2 teaspoon of pepper

1 pound of NH tomatoes (halved, if large)

8 large eggs

1/4 cup of baby spinach (chopped)

toasted sourdough bread (from Boppy's Bakery)

 

Directions:

  1.  Preheat your oven to 400 degrees.
  2.  Heat oil in a large oven-safe skillet on medium. 
  3. Add onion and cook until golden brown (stirring constantly.) 
  4. Stir in garlic, cumin, salt and pepper. 
  5. Cook for 1 minute. 
  6. Stir in tomatoes. 
  7. Transfer pan to oven and roast for 15 minutes. 
  8. Remove pan from the oven and stir the mixture. 
  9. Make 8 small wells in mixture and crack 1 egg into each.
  10. Bake eggs for 10 minutes.
  11. Sprinkle with chopped spinach.
  12. Serve with Sourdough toast.
